Potato salad with olives
ingredients
- 1kg potatoes
- 5 tablespoons of Lelia Extra Virgin Olive Oil with Vinegar
- Salt
- Pepper
- 1 garlic clove
- 1 boiled egg
- 1 tin can of tuna
- Lelia Kalamata Olives with extra virgin olive oil
- Anchovy fillets
- Tomato
method
Wash the potatoes and boil them with the peel. Let cool, then peel off and cut into cubes. Drizzle with Lelia extra virgin olive oil with vinegar, salt and pepper. Rub with garlic the interior of the salad dish and place the potatoes inside. Cut the eggs in quarters and add them to the potato salad. Garnish with tuna, Lelia Kalamata Olives and anchovy fillets. You can also garnish with sliced tomato or you can put the salad on a dish with lettuce leaves and garnish with the eggs. Alternatively, you can replace the garlic with spring onion cut into slices and remove the tuna.
